UK Biltong Processing Project: 3-Ton Industrial Drying System

Customized Drying Rooms for Commercial Biltong Production
IKE supplied three customized EMB-JL1500D drying rooms for a UK biltong producer, with a combined designed loading capacity of 3 tons per batch. Discover the real project and how IKE can support meat cutting, low-temperature drying, slicing and packaging in commercial biltong processing.

Project Background: A 3-Ton Biltong Drying Requirement

A commercial biltong producer in the United Kingdom selected IKE to supply a customized industrial drying system for its meat processing facility.

The customer required a total designed loading capacity of 3,000 kg of beef per batch, along with a drying room configuration suited to the factory layout, meat handling arrangements and specific operating requirements.

IKE supplied three EMB-JL1500D modular heat pump drying rooms, each designed for approximately 1,000 kg per batch. All three rooms share identical dimensions and equipment configurations, including customized stainless steel trolleys, drip collection trays, anti-slip flooring and integrated UV lamps.

The drying system was configured for the customer's specified operating temperature of 30°C.

This project provides a practical example of IKE's customized industrial drying capabilities and how drying equipment can form a central part of a commercial biltong processing operation.

Understanding the Biltong Production Process

Industrial biltong production involves more than drying meat. The dimensions of the raw beef, preparation methods, loading arrangements, finished product format and packaging requirements all influence equipment selection.

A typical commercial biltong processing workflow includes:

Raw Beef Preparation → Meat Cutting → Seasoning or Marination → Hanging and Loading → Low-Temperature Drying → Product Inspection → Optional Biltong Slicing → Packaging

The specific process depends on the manufacturer's recipe, product specifications and validated food safety procedures.

For companies planning a biltong processing line, it is important to consider how each stage connects with the next, rather than selecting individual machines based on capacity alone.

Preparing and Cutting Beef Before Drying

Before drying, beef is selected, trimmed and cut into strips according to the required product dimensions.

Consistent cutting dimensions help manufacturers organize loading arrangements and establish repeatable processing conditions. The thickness of the beef also influences the moisture removal requirements.

IKE can provide meat cutting equipment for suitable commercial processing applications, with machine selection based on the raw material, target cutting dimensions and required throughput.

Hanging and Loading for Low-Temperature Drying

Biltong is commonly processed as hanging meat strips, making trolley design and chamber layout important considerations.

For the UK project, IKE supplied customized stainless steel trolleys that support hanging rods and mesh drying trays.

The hanging configuration allows beef strips to be arranged across multiple levels, with space for air circulation around the material.

The same trolley design can also accommodate trays when different product loading arrangements are required.

Each trolley includes bottom drip collection trays to collect liquids released during drying and help keep the chamber floor cleaner.

The Delivered Solution: Three Customized EMB-JL1500D Drying Rooms

The main equipment supplied for this UK project consisted of three modular EMB-JL1500D heat pump drying rooms with a combined designed loading capacity of 3 tons per batch.

Unlike pre-assembled AIO drying rooms, the EMB series uses a modular chamber structure assembled at the customer's facility. This allows chamber dimensions and internal layouts to be customized around different installation requirements.

For the UK customer, all three drying rooms were supplied with matching configurations.

Low-Temperature Drying at 30°C

The customer specified a drying temperature of 30°C for its production process.

IKE configured the JL series drying rooms to meet this operating requirement. The equipment provides controlled low-temperature drying conditions as part of the customer's broader production process.

Appropriate processing controls, microbiological safety measures and finished-product verification remain essential parts of a validated biltong manufacturing procedure.

Practical Features for Meat Processing

The drying rooms included several customer-specific features:

  • Dual-use stainless steel trolleys for hanging rods and optional mesh trays

  • Bottom drip collection trays to collect meat juices during drying

  • Anti-slip stainless steel flooring to support cleaning and reduce slipping risks in wet conditions

  • Manually controlled UV lamps as auxiliary equipment for the customer's hygiene management procedures

  • Modular stainless steel chamber construction adapted to the customer's facility requirements

These features reflect the importance of equipment layout, material handling and routine cleaning in commercial meat processing facilities.

Installation at the Customer's UK Factory

The three modular drying rooms were assembled at the customer's production facility in the United Kingdom.

Actual installation photographs show the stainless steel chambers under construction, the completed drying rooms and beef strips hanging inside the equipment.

The project demonstrates IKE's ability to customize and deliver industrial drying equipment for a specific factory environment.

Beyond Drying: Equipment Options for a Biltong Processing Line

Although this UK customer purchased the customized drying system, manufacturers planning a new biltong facility may require additional upstream and downstream processing equipment.

IKE can support equipment selection for meat cutting, drying, post-drying slicing and packaging, depending on the production requirements.

Meat Cutting Equipment

Suitable meat cutting equipment can be selected according to the required strip dimensions, production throughput and handling characteristics of the raw beef.

For a coordinated production setup, the cutting dimensions should also be considered when planning trolley loading and drying room capacity.

Post-Drying Biltong Slicing

Some biltong products are packaged as whole strips, while others are sliced after drying.

When producing sliced biltong for retail packs, manufacturers may require dedicated slicing equipment suitable for the finished product's texture and thickness.

The cutting requirements before drying and after drying are different, so the appropriate equipment should be selected for each application.

Weighing and Packaging Equipment

After the required product inspections and any final cutting operations, biltong may be portioned and packaged for retail or wholesale distribution.

IKE offers packaging machinery options for different bag types and production requirements, including suitable weighing, pouch filling and sealing equipment.

Packaging format, shelf-life expectations and product safety requirements should be evaluated together when selecting the final packaging method.

Matching Equipment Capacity Across the Production Line

When planning a commercial biltong processing line, the capacity of each machine should be evaluated in relation to the overall production schedule.

For example, a drying system designed to accommodate 3 tons of beef per batch does not automatically mean the complete processing line can produce 3 tons of finished biltong per day.

The final output depends on factors such as raw material loading, product weight loss, validated processing time, operating schedules and downstream equipment capacity.

A well-planned equipment configuration should consider:

  • Raw beef cutting capacity and preparation requirements

  • Meat strip dimensions and trolley loading arrangements

  • Drying room batch loading and operating schedules

  • Material handling between processing stages

  • Finished-product slicing and packaging throughput

  • Cleaning access and factory layout

By considering these factors at the planning stage, manufacturers can identify potential production bottlenecks and select equipment more effectively.

IKE Machinery: From Individual Equipment to Processing Line Solutions

The UK biltong project demonstrates IKE's experience in customized industrial drying equipment, including modular chamber construction, low-temperature configuration and specialized meat handling accessories.

For customers requiring more than a drying system, IKE can also help evaluate suitable meat cutting and packaging machinery as part of a broader processing line proposal.

Our approach is to consider the customer's actual product, processing capacity, factory space and equipment requirements before recommending a configuration.

Whether you are expanding an existing meat processing facility or planning a new biltong production operation, IKE can support your equipment selection and project planning.
